Friday cookery time in Lancashire with Tim Maddams

TV chef, food writer and cookery teacher Tim Maddams is heading for Lancashire this month to serve up a treat in the county.

Tim, a regular face in the hit TV series River Cottage, is bringing his very special take on cooking to the ESSE pop-up cookery school in Preston’s Fishergate Shopping Centre.

He will be in the pop-up on Friday afternoon (June 19), giving demonstrations and talking food with the audience.

Tim is among the team of chefs that ESSE – the Barnoldswick stove manufacturer – has recruited for its month-long Lancashire event, believed to be the first of its kind in the county.

Leading chefs from some of Lancashire’s favourite dining venues and gastro-pubs will also be involved in the month-long pop up. James’ Places, owner of a host of acclaimed Lancashire restaurants and hotels, including Mitton Hall in Whalley, the Shireburn Arms in Hurst Green and The Emporium in Clitheroe, is also supporting the event with cookery demonstrations from members of its team.

Tim says: “Lancashire is a place I’m becoming increasingly familiar with. I’ve got friends up there and I just love visiting.

“The people are so friendly and it is a beautiful part of the country.

“It’s also a tremendous place for foodies. I think what makes its food and its produce so special is that world-famous Lancashire honesty.

“There are some tremendous suppliers and farmers in the area and they produce some fantastic foods.”

The 34-year-old chef is keeping his menu for Friday firmly under wraps.

But there will be an element of his trademark ‘wild food’ in the mix, he says. “It’s going to be pretty relaxing, a bit of chat, me showing off a bit and, of course, some food to sample.”

Tim’s love of food grew from an early age and he spent much of his childhood on his family’s farm in Wiltshire, gleaning a close understanding of farming and fostering a love of the countryside, wild food and quality produce.

Over the course of his career, he has worked under such luminaries as Marco Pierre White and Mark Hix, as well as leading the VIP catering team for the Ferrari F1 team in Europe.
