This recipe is the ultimate Italian-style comfort food, but it takes less than half an hour to cook, and won’t make you feel like you’ve just ingested your whole week’s calories in one sitting.

Ingredients
280g wholewheat spaghetti
Six bacon medallions (roughly-chopped)
One banana shallot (diced)
Two garlic cloves (crushed)
200ml reduced-far creme fraiche
50g parmesan (grated)
One egg yolk
Parsley (chopped)
Salt and pepper

Method
1. Bring a pan of water to the boil, add the wholewheat spaghetti and cook for 12 minutes until al dente. Drain, reserving some cooking water.

Hide Ad2. Meanwhile, mist a large frying pan with calorie controlled cooking spray. Set over a medium heat and cook the roughly-chopped bacon medallions for three to four minutes until browned. Reduce the heat, add the diced banana shallot and the crushed garlic to the pan, then cook for one to two minutes until just softened.
3. Stir in the reduced-fat crème fraîche and grated Parmesan. Add some reserved pasta water to loosen the sauce, then season well. Simmer for a minute, remove from the heat.
4. Using tongs, transfer the cooked, drained spaghetti to the pan with the sauce. Add the egg yolk and move the spaghetti with the tongs to coat the pasta and thicken the sauce.
5. Season and garnish with chopped fresh flat-leaf parsley.
