A Lancashire delicacy has seen a resurgence thanks to the help of a celebrity chef.
The number of Tosset Cakes, a 14th century Lancashire delicacy, sold by supermarket, Booths, has risen to 5,000 after they appeared on Channel 4’s Jamie and Jimmy’s Friday Night Feast back in January.
And to celebrate, Jeff Brookfield, Store Manager at Garstang Booths, presented a cheque for £1,500 to the newly launched, Tosset Education Fund, which will support Lancashire primary schools.
Speaking at the event held at Parrox Hall, Booths Buyer, Julian Valentine, said: “We are proud of our northern roots and believe in preserving our heritage, which made us ideally placed to revive the Tosset Cake, which has been eaten by Lancashire families dating back for centuries.
“The support of Booths shoppers has been extraordinary and we are delighted to have sold 5,000 Tosset Cakes.
“It is a pleasure to be able to donate a percentage of the profit to the Tosset Education Fund to support local Lancashire primary schools”.
The Tosset Cake was a prized Lancashire treat, flavoured with caraway and coriander seeds but it has not been manufactured since the First World War when butter and sugar were rationed.
The cake is local to Stalmine and Preesall and dates back centuries; most likely linked to the old wakes holy day celebrations to mark the feast day of St Oswald.
Filming for the Channel 4 series about “lost foods” in the UK, starring the world-renowned chef and food advocate, featured the vicar and community around St Oswald’s Church Preesall and included the revival and filming of the Tosset Feast.
Harold Elletson, Chairman of Parrox Hall Preservation Trust said: “The Tosset Feast was held every year for many centuries.
“It commemorated Saint Oswald, the North of England’s great king, and we are delighted that, following the successful introduction of Tosset Cakes into their stores, Booths are now helping to re-launch the feast, which will raise funds for educational projects in this part of Lancashire.”
Tosset Cakes were the latest product brought to Booths as part of its Forgotten Foods campaign which has also included Morecambe Bay potted shrimps.
