The 37-year-old suffered fatal injuries and died at the scene.
A statement from Mr Anderson’s family said: “Stuart was a much loved father of two children aged nine and 13.
“He had recently moved from Blackpool to Tarleton to progress his career as a chef.
“The family would like to thank the local community for their support at this difficult time and have requested that they are allowed time to grieve.”
