Volare opened last month in Blackpool Road in Ashton, and is already proving popular.

It was set up by Giuseppe Eonuri, 23, who has worked in restaurants for most of his life, with the help of his partner Rebecca Astin.

Rebecca, 22, said: “He wanted an authentic Italian cafe and there’s not much around here, so he saw a gap in the market and went for it.

“He makes thin-based pizzas - he wanted to bring Italian food into the city.

“It has really taken off, the local people really like it, and we get a lot of regulars coming in already so it’s going really well.

“We get our coffee directly from Sicily because that’s where Giuseppe is from - that gives us the edge with the coffee.

“With the pizzas, he makes everything himself, he really works hard for it.”
The couple work in the Lane Ends cafe along with one of Giuseppe’s friends who also helps.

Rebecca, who lives in Cottam, said: “In the night time, we have pizzas, pasta, garlic bread and Italian starters.

“In the morning it is more like coffees and Italian desserts - we make our Tiramisu every day.

“We’re not really a restaurant, it’s more of a cafe - it’s not as formal as a restaurant, it’s more relaxed.

“You can come in and have a snack, and we are open into the evening.

“It’s mainly a takeaway in the evening, but people can sit in.

“We are busy all the time, especially at the moment.

“We are doing 12-hour shifts, but you get out what you put in.”
